cauliflower pizza doughAdopting a diet without a lot of carbohydrates does not mean you have to give up the pizza. Ordinary pizza dough is very rich in carbohydrates. On the contrary, the pizza dough below is almost carbohydrate free. And for good reason: it is based on cauliflower.

You can garnish this cauliflower pizza base with your favorite ingredients to suit your taste.

Like any pizza dough worthy of the name, it is crunchy on the outside and soft on the inside.


1 small cauliflower
2 eggs
2 cloves garlic
150 g grated mozzarella
10 g fresh parsley
¼ teaspoon of salt

Preheat the oven to 220 degrees and place a sheet of baking paper on the baking sheet.
Cut the cauliflower into large pieces and pass it to the food processor with the cloves of garlic until you get small pieces.
Put the cauliflower in a microwavable dish and put in the microwave for 3 minutes at maximum power.
Let the cauliflower cool down and mix it with ¾ mozzarella, eggs, parsley and salt.
Remove the hot baking sheet from the oven and spread the mixture in a circle about 30 cm in diameter. The pizza base should be about half a centimeter thick.
Put the baking sheet back in the oven and bake for about 40 minutes until the edges start to turn golden brown.
Remove the pizza base from the oven and cover it with your favorite ingredients and the rest of the mozzarella.
Refill the pizza for about 5 minutes so that the filling ingredients are hot.
