From an early age, my children learned that we eat large breakfasts in our house, which is very common in Mexico, where I grew up. It doesn’t matter if they are at school or on summer vacations, we always have a great breakfast. Some of our favorite options are pancakes, french toast , smoothies, oatmeal, and bacon and eggs.
Healthy remote pancakes
As I mentioned earlier, in Mexico people are used to having a great breakfast, which consists of anything from muffins , chilaquiles , soups , leftovers from the previous night.
I raised my children with the same tradition, so the days I decide to simply give them cereals, they ask “what’s for breakfast” because they consider cereals to be a snack and not a real breakfast.
Over time, I began to be more selective with the ingredients I use for my children’s breakfast. One reason is because one of my children is very delicate, but he loves breakfast. Sometimes he doesn’t eat much for dinner or lunch, so I like to make sure that everything he eats for breakfast provides the nutrients and energy he will need throughout the day.
What makes these pancakes healthy?
Normally the pancakes include normal refined flour, eggs and some other ingredients. While those can also be tasty, I love to include ingredients that don’t change the taste much, but that provide much needed nutrients.
For example, for this recipe, I substitute normal flour for quinoa flour or almond flour . In addition, I include other healthy ingredients that include oatmeal, Greek yogurt and coconut sugar instead of common sugar.
As a result of these ingredients, these pancakes are not as fluffy as normal pancakes, but they are soft and delicate and my picky eats five or six of them every time I make them!

The ingredients
1/2 cup quinoa flour or other flour available
1/2 cup Greek yogurt
1/4 cup cottage cheese
1 egg
1/2 cup old fashioned oatmeal
2 egg whites
1 teaspoon ground cinnamos
1 teaspoon vanilla extract
1 tablespoon of coconut sugar or so depending on the level of sweetness desired.
Instructions
Mix all the ingredients until they are completely integrated and moderately soft. If it is too thin, add more flour or oatmeal and mix again.
Add some butter or cooking spray to a nonstick skillet or pan over medium heat.
Add approximately one 1/8 cup of the mixture until a circle forms and cook on each side for approximately 3 minutes, repeat with the rest of the mixture.
Serve immediately with whipped cream, fruit and maple syrup if desired.
