I’m probably late to get in the cauliflower car, but I’m LOVING THE CAIFFER lately! Roasted cauliflower, fried cauliflower, cauliflower, it’s delicious, no matter how you cook it!
So I used cauliflower instead of the traditional thick semolina that you would serve with Cajun shrimp. Don’t get me wrong, I also like semolina, but sometimes I want to eat a little healthier without sacrificing the taste.

Cauliflower “Grits”:
This cauliflower semolina recipe uses “riced” cauliflower that is prepared by crushing the cauliflower into small pieces on a grater. Then I cook the cauliflower briefly. I love the texture of cracked cauliflower and when cooked, it works very well as a substitute for rice in a change of fried rice, and it also works as a substitute for semolina in this recipe.

I use a lot of cheddar cheese in cauliflower to give the dish extra flavor and creaminess, just as I would with cheese grits. That is an elegant way of saying that I am addicted to cheese. and I would add twice the amount in this recipe if it were socially acceptable.

And the Cajun Shrimp … well, there’s not much to say about it. You know I love my Cajun flavors!
I didn’t even realize how many recipes I have with Cajun Spice until I started writing this post. Apparently we use Cajun spicing a LOT in my kitchen! Cajun Shrimp With Cauliflower
What you will need for this recipe:
Big head of cauliflower.
A grater To make cauliflower on fire. A box grater like this is the easiest to work. You can also use a large food processor and quickly polish cauliflower florets, but honestly, I think a grater is easier. Cauliflower lattice very easily, and for me it is faster to grate than to cut the cauliflower into pieces and then clean a food processor. Your choice!
Shrimp , obviously Use raw shrimp. Take only a few minutes to cook the shrimp, but the taste and texture are incomparable to the precooked frozen shrimp you would buy. Any size of shrimp will work in this recipe.
Cheese. A lot of cheese. I mean, this can definitely be a kind of “taste”, but I think that 2 cups is a good amount for this recipe. It’s just enough to make cauliflower semolina really cheesy without feeling like you’re drowning in cheese. Good cheddar cheese works great in this recipe, but feel free to use any meltable cheese: Monterrey Jack, Gouda, even mozzarella, everything would work fine.
Cajun seasoning . This is sure. A kind of “taste.” Some Cajun seasonings can be spicy , so use only a little at first if you are not sure. You can always add more after cooking the shrimp and give it a taste. You cannot undo it. Try to find Cajun seasoning that does not contain salt or any other additive. This way, you can control the salt and Cajun flavor separately for cooking. I love this Healthy Solutions. I use it in most of my kitchen that requires Cajun seasoning. The package has enough to use with several recipes, but not so much that it stays in your cabinet for years and becomes obsolete or loses flavor. In addition, they are a small company that prides itself on its ingredients and really supports its product, and I like that kind of thing.
Keto Shrimp And Cauliflower “Grits”
This quick and easy Cajun “Grits” shrimp and cauliflower dinner has all the flavor and texture of the classic southern dish and is super healthy to start! Keto-friendly and gluten free.

The ingredients
1 medium cauliflower, riced
2 tablespoons olive oil, divided
1/4 cup of water
2 cups shredded cheddar cheese
1 pound raw shrimp, peeled, veins and tail
2 teaspoons Cajun seasoning (or to taste, some Cajun mixes are spicy!)
Salt and pepper to taste.
Optional: 1 tablespoon chopped chives, parsley or cilantro to decorate
Instructions
Cut the cauliflower into quarters. Use a grater to “rice” the cauliflower into small pieces such as rice.
Add cauliflower, 1 tablespoon of olive oil and 1/4 cup of water to a large pot or large skillet with high sides. Cook over medium heat for 5-10 minutes, stirring frequently. The cooking time depends on how cooked your cauliflower likes. 5 minutes will produce more crunchy cauliflower grains, and 10 minutes will give you a softer cauliflower. Add the grated cheese and continue cooking and stir until the cheese melts. Season with salt and pepper, if desired.
Season the shrimp with the Cajun seasoning (2 teaspoons, or to taste). Add salt and pepper if desired. (Some Cajun seasonings already contain salt, so you may not need to add additional salt.)
Heat the remaining tablespoon of olive oil (1 tablespoon) in a large pan. Add seasoned shrimp and cook about 2-3 minutes per side over high heat, or until shrimp are fully cooked. Serve the Cajun shrimp on the “semolina” of the cauliflower and garnish with scallions, chopped parsley or cilantro.
